Cheesy Broccoli Soup

The key to this delicious recipe is the Cream Cheese.  It is quite delightful!  My daughter Brittney has informed me that it tastes better than Panera Bread.  This soup is wonderful served in bread bowls, however, today I did not have time.  This is about a 30 min. recipe, so its great if you work full time.


Ingredients:
  • 3 cups chicken broth
  • 2 bunches of broccoli chopped
  • 1/2 onion, chopped
  • 2 cups milk
  • 1/2 cup margarine
  • 5 tbsp all-purpose flour
  • 1 (8 oz) package of cream cheese
  • 1 cup shredded cheddar cheese.

I made a double batch in the photos I provided.  This single recipe makes about 4 servings, and 670 calories.

Directions:


Bring chicken broth to a boil in a pot.  Add broccoli and onion; cook at a boil until tender, 10-12 min.


Next:


Combine milk, margarine, flour, and cream cheese in another pot over medium; cook and stir until the margarine melts and the mixture begins to thicken, about 5 minutes.  Stir cheddar cheese into the milk mixture; cook and stir until the cheddar melts completely.

Next:

Pour the cheese mixture into the broccoli mixture, in the larger pot; stir well.  All done.  Enjoy with some yummy French bread or in a nice homemade bread bowl.  I promise you'll want seconds!
