Sweet Potato Pancakes

I made this recipe up as I went.  It is gluten, dairy and soy free.  Very filling.  a little heavier pancake, but delicious.


Ingredients:

1 1/2 Cup Organic Unbleached white flour
1 tbsp baking powder
1 large egg
1 1/2 Cups Organic Unsweetened Almond Milk
1 tsp vanilla extract
1 tbsp 100% virgin olive oil
1 small can Cut Sweet Potatoes in syrup
2 tsp cinnamon

Directions:

I mixed all of my ingredients in my Ninja, but you can use a mixing bowl.  Do not drain the sweet potatoes.  Dump the whole can.  If your batter seems too thick add a little more almond milk.  The  1 1/2 cups was just about right for me.  You don't want your batter too thick or it doesn't get cooked clear through the pancake.  You will want it somewhat runny.



This was actually a little too thick.  I started out with only 1 cup of almond milk.  I ended up adding another 1/2 Cup.  Cook on your pancake griddle OR stove on medium heat.  You don't want your heat too hot or the cake will burn before its cooked through the middle.


When your cake looks like this, bubbly and dry around the edges, its time to flip.


This is what mine looked like after I flipped them.  A nice golden brown.


Then Voila.  This recipe makes 6-8 nice size pancakes.  Depends how big you want them.  Serve with your organic butter.  I use Earth Balance Soy Free Vegan spread, and sugar free syrup.

Gluten/Dairy Free Pan Fried Breakfast Casserole

I have had to start eating Gluten, Dairy and Soy free, so I've been experimenting.  I made this for myself and the kids today for breakfast.  Its really nothing unusual.  Just really a reminder that we can still eat good food!!


Ingredients
3 small potatoes, cleaned well, but not skinned
1/2 white onion chopped
4 oz. chopped ham
6 whole eggs
salt free seasoning
1 Tbsp Coconut Oil

Directions:
In a fry pan, melt Coconut oil.  I used my veggie spiral tool and spiraled the potatoes.  Rinse the starch off. Put them in the hot oil.  Then add the onion.  Mix this up and cook until the potatoes are browned and cooked.   In a mixing bowl wisk your eggs and then add the chopped ham.  Add this to your potatoes. Add your seasoning.  Cook until eggs are done.  This makes about 4 servings.  Enjoy!

Chocolate Hazelnut Smoothie

I should have taken a picture before I drank almost all of it.  This smoothie is thick and creamy.  You will feel full after drinking this smoothie. 


Ingredients:
1 Cup Unsweetened Original Silk Almond Milk
1 Tbsp Chocolate Flavored Hazelnut spread-Nutella
3 Tbsp Cocoa baking powder
1 whole banana

Directions: 
Place all ingredients into blender and blend until creamy and completely mixed.
Enjoy!!

Red Raspberry Smoothie

I do a lot of experimenting with smoothies.  I took out all gluten, soy, and dairy from my diet.  I'm on to a healthier, feel better, ME!!  This one is low in sugar and calories, but high in vitamins and protein. 


Ingredients:
1/2 cup red raspberries
1 1/2 cup kale (frozen)
1 1/2 cup unsweetened almond milk (silk)
1 Tbsp Collagen Hydrolysate (great lakes gelatin)

Directions:
Mix all ingredients and blend in blender well.

Aunt Tracy's Homemade Granola


She wanted me to make sure I let you all know that you should use a cast iron skillet for best results.

Ingredients:

1 Cup Oats
1 egg
1/4 tsp cardamom 
1/4 tsp cinnamon 
1/4 tsp turmeric 
1/4 tsp ginger 
1 tbsp Ghee or Coconut oil

Directions:
Melt 1 tbsp ghee or coconut oil in your skillet. Mix all of the ingredients with your oats.  Add to the melted coconut oil or ghee.  Swirl it around in your skillet and toast for 10 minutes.  Take out and break up your oats and toast for 10 minutes more in oven at 425.

Jello Waffles

Ok moms, if you want a tasty fun breakfast for the kids, here you go.  These are simple and your kids will love them.  To make it even yummier, add some fruit to your batter.


Ingredients:
  • 2 1/2 cups flour
  • 3 tsp. baking powder
  • 3 eggs
  • 2 tbsp vegetable oil
  • 1 box of your favorite jello  (I used raspberry for this recipe)  Try sugar-free.
  • 1 1/2 cups milk


Directions:

Plug in waffle iron.  Mix all of the ingredients together. 


 Batter should be thick.



Cook on waffle iron until golden.  Enjoy!!!

Nutritious Delicious Smoothie




Ingredients:
  • 1 whole ripened banana
  • frozen strawberries 5-6
  • 1 cup kale
  • 1 scoop of your favorite protein mix OR 1/2 cup vanilla yogurt
  • 1 1/2 Cup water
  • 1 cup Ice
Directions:


Cut up bananas, and put everything in your blender.  Blend well until everything is mixed well and ice is crushed.

Enjoy!!

Perfect Pancakes

This is my mothers recipe.  I remember she used to make these all the time when I was little.  I make them for my family and they love them as well.  I've had several compliments when I've made others this recipe.  This pancake is light and fluffy, with a sweet flavor.  1 batch makes about 10 small cakes.  I usually double the batch.  They are light a fluffy and so filling.


Ingredients:

1 1/4 Cup Flour
3 tsp baking powder
3 tsp sugar
1/2 tsp salt
1 egg
1 1/2 cup milk
1 tsp vanilla
2 Tbsp. vegetable oil

Directions: 


Sift together Flour, baking powder, sugar and salt.  Next add milk, egg and oil.  Mix well.  

Mixture should be thick, yet not too thick.  If its too thick, add a little more milk, but take care as to not make it too runny.


Pour about 1/4-1/3 of a cup onto a hot greased griddle.  Bubbles should form on top of the cake.  When sides seem cooked or cake is completely covered in bubbles, time to flip.


Should be a beautiful golden brown when flipped.  Cook on second side until golden brown.


Voila!!  Serve up with some butter and syrup, a side of eggs.  Perfect start to your morning.

Breakfast Burritos

This makes MANY!

You will need:
1-2 lbs pork sausage
1 whole onion chopped
2 jalapenos chopped- leave seeds if you want it spicy
1 dozen eggs
1 bag hash browns
1 jar of salsa
1 16 oz bag of shredded cheddar cheese
24 ct. small tortilla package

I brown the sausage and onion in a pan and the hash browns and jalapenos in another pan. While browning, crack 12 eggs in a bowl and whip.  Once the sausage is done drain the grease out of the pan and then add the eggs to the sausage and cook until eggs are done.  Then, simply add your hash brown mix to your sausage mix and add the salsa and cheese.  Mix well, and serve up into your tortillas.
