Stephies Italian Jambalaya-Gluten Free

This is a gluten free dish.  Its healthy and has lots of natural flavors.  Has a little bit of a kick to it with the pepper and stewed tomatoes, but its delicious.  Takes less than 30 min to throw together.


Ingredients:
4 Chicken breasts
 1 tbsp coconut oil,
1 whole slivered onion
 28 oz can stewed tomatoes
 sliced cherry tomatoes
2 cups chopped up fresh cabbage
 2 teaspoon garlic powder 
1 teaspoon onion powder 
dash pepper 
1 tsp Adobe seasoning 
2 teaspoons Italian seasoning
 One smoked green chili chopped

Directions:
Heat 1 tbsp of coconut oil in skillet, Cut up 4 chicken breasts into chunks. Cook thoroughly, add slivered onions.  Then add all the seasonings, stewed tomatoes, cherry tomatoes, green chili, and cabbage.  Cook until cabbage is soft.  Serve over brown rice.

Oven Fried Chicken



 Who doesn't love fried chicken!!!  This is the first time I've made it this way.  I usually Fry it in my electric skillet with a TON of oil.  This time I baked it.  The seasonings I've added gave it such good flavor, my husband loved it over my regular fried chicken.  I don't like to boast, but my regular fried chicken is pretty darn awesome.  This was delicious.

Ingredients:

  • 1 Tbsp Butter
  • 1 Cup flour
  • 3 Tbsp taco seasoning
  • 2 tsp Kentucky Chicken and Poultry Seasoning
  • 1 tsp pepper
  • 1 tsp garlic salt


Directions:

The KEY to any good Fried Chicken recipe is to soak it in salty ice water.  I store it in my refrigerator for a couple of hours topped with ice cubes.  This will create a yummy crispy crust.


Combine all of your spices and flour


Coat each piece of chicken on both sides.


Place in a Hot 9 x 13 casserole pan with 1 Tbsp MELTED butter.  Bake at 425* for 35 minutes.  Flip over chicken and bake on the other side for 15 minutes.  I rotated a couple times on each side. About 10 more minutes on each side.  You can also fry this recipe, which I normally do.  Trying to eat a little healthier.

Serve it up with a nice baked potato and a veggie, OR mashed potatoes and gravy and a veggie.

Mikes favorite Hot Wings

I buy my sauces...
Great Value Louisiana Hot Sauce...I've tried others and my family prefers Great Value...Has a better twang :)
KC Masterpiece Honey Teriyaki sauce
Sweet Baby Rays BBQ sauce
drop your drummies in flour/salt/pepper/garlic salt and cover completely.
I fry my drummies in a deep fat fryer until golden brown. 
drain oil from drummies.
pour your sauce in a bowl w/ lid.
drop drummies in sauce.  Put lid on and shake until completely covered.
Place in baking dish and bake in oven at 250 until you are finished frying all drummies. 
Enjoy!! 

Chicken and Noodles

well, pretty simple really.
Before i go to work i cook a whole chicken in the crock-pot on high. Completely fill your crock with water
When i come home i take the chicken out to cool.
I throw in about 5 chicken bullion cubes in with the chicken broth
1-2 tbsp sage
salt/pepper to taste
1 tbsp garlic salt
throw in your noodles.  I prefer homemade.  If you don't have a good noodle recipe I have one posted under perfect pastry.
I de-bone the chicken and throw it all in the pot.
Mix 2 tbsp cornstarch with cold water....put in your pot for thickness. Stir in slowly or it will clump.
Let cook for a couple more hours or until noodles or done.

You can cook this over the stove top to get the noodles done a little quicker.  If I get home late I will transfer it to the stove.

We like ours over mashed potatoes.
So yummy!

Chicken Enchiladas



What you need:

1 Whole chicken
1 Lrg. container of sour cream
Chicken bouillon
2 containers of french onion dip
whole chopped onion
tortillas
cheddar cheese
salt and pepper to taste

1.  cover your chicken completely with water in a stockpot. boil until it starts to fall off the bone.
 2. Remove chicken from broth (do NOT discard broth). de-bone the chicken.
3.  while chicken is cooling, mix about 3 cups of your broth with about 3-5 bouillon cubes.  Add sour cream and french onion dip, and salt and pepper. Simmer until all is mixed well.  sauce will appear runny, but thickens as it bakes
4.  Make your enchiladas....inside tortilla, put a little chicken, cheese, and sauce.  Roll and repeat until your pan is full.
5. pour the remainder of your sauce over the enchiladas. cover with cheese.
6. cover with aluminum foil and bake at 350 for 45 min. - 1 hour.
