Shepherd's Pie


I made this tonight for the 1st time and just threw some things in the skillet and it turned out FABULOUS!!! 
It would probably make a better winter meal, than a summer meal, but i had leftovers to use up and this is what became of them.

Ingredients:
2 lbs hamburger
1 large can cream of chicken soup
16 oz frozen green beans (mine were pre cooked with bacon)
2 Tbsp Butter
6 celery stalks chopped
1 whole garlic minced
1 whole onion chopped
mushrooms
pre-made mashed potatoes
grated cheddar cheese
2 tsp celery salt
salt and pepper to taste.

Instructions:

In skillet brown hamburger, drain.  In another pan melt 2 Tbsp butter.  Sautee' garlic, onions, and chopped celery.  Then add mushrooms, celery salt and cream of chicken soup.  Heat until hot all the way through mixture.  In a large baking dish combine cooked hamburger, sauce mixture and green beans.  Stir thoroughly.  Smooth mashed potatoes over the top with salt and pepper, than add shredded cheddar cheese.  Bake at 350 degrees for 40 min.  Serve with some bread and butter....YUMMO!!

Gluten/Dairy Free Pan Fried Breakfast Casserole

I have had to start eating Gluten, Dairy and Soy free, so I've been experimenting.  I made this for myself and the kids today for breakfast.  Its really nothing unusual.  Just really a reminder that we can still eat good food!!


Ingredients
3 small potatoes, cleaned well, but not skinned
1/2 white onion chopped
4 oz. chopped ham
6 whole eggs
salt free seasoning
1 Tbsp Coconut Oil

Directions:
In a fry pan, melt Coconut oil.  I used my veggie spiral tool and spiraled the potatoes.  Rinse the starch off. Put them in the hot oil.  Then add the onion.  Mix this up and cook until the potatoes are browned and cooked.   In a mixing bowl wisk your eggs and then add the chopped ham.  Add this to your potatoes. Add your seasoning.  Cook until eggs are done.  This makes about 4 servings.  Enjoy!

Cheeseburger Potato Bake



This is a new dish tonight.  I had some left over baked potatoes in the fridge and an opened container of cheddar cheese soup.  So I threw some stuff together and gave it a name.  Turned out pretty darn good.  I think next time I'll add some pickles for a little more kick :)


Ingredients

2 lbs ground beef or venison
8 baked potatoes, or cut up some fresh.
1 onion chopped
1/2 cup beef broth
1 can cheddar cheese soup 
1 can cream of mushroom soup mix
8-10 sliced cooked bacon chopped
2 cups cheddar cheese
1 tsp onion powder
1 tsp garlic powder
salt/pepper to taste

Directions:

Cook your ground beef in skillet.  Drain and put in the bottom of a 9x13 casserole dish.  Top with cubed up potatoes and chopped onions.


In a separate bowl combine soups, onion powder, beef broth, garlic powder, salt and pepper.  Mix thoroughly and pour over the beef, potatoes, and onions.  Mix everything together making sure the potatoes are coated.  Top with cheddar cheese and cooked bacon.


Bake at 375* for 1 hour covered.
