Red Pork Chili

I had some leftovers in the refrigerator and it was cold today, so I gave them a new face.  My husband said it was the best chili I've ever made.  He probably just says that to make my day, but it was pretty good!


Ingredients:

1 lbs cut up pork (I had left over ribs that I used)
1 chopped onion
2 Tbsp flour
2 Tbsp Olive Oil
1 Tbsp Garlic Salt
1 Tbsp Onion Powder
1 Tbsp Cayenne Pepper
2 Tbsp Cajun Spice
3 Tbsp Chili Powder
8 cups water
1 15 oz can Tomato Sauce
2 cans Ortega Fire Roasted Diced Green Chilis
1 can black beans
1 can chili beans
1 can kidney beans
2 Cups Steamed Brown Rice (recipe on my blog)
1 can diced tomatoes

Directions:

Warm or Cook pork in 2 Tbsp Olive oil.  Once browned, Or Warmed add Flour completely cover all meat.
add 2 cups water. stir until thickened.  Add remainder of spices and stir to mix thoroughly.  Add the rest of the ingredients.  Stir, and Cook on medium heat for about an hour.  You could also make this in your crockpot.

I poured this over a burrito and topped with guacamole.  You could top with cheese and sour cream.  Its very tasty.

Pulled Pork Tostadas

Well after Mariah's graduation we had quite a bit of left over pulled pork, so...I made pulled pork tostadas.  They turned out delicious!


Ingredients:

Pulled Pork...I used about 1 1/2 lbs. left-overs
1/3 Cup Taco seasoning
1 - 15oz can Kuners Southwestern Jalapeno black beans with lime juice
1 - 7oz can Ortega Fire Roasted Diced Green Chiles
1/4 cup water
Corn Tortillas
1/3 cup - 1/2 cup oil
 Toppings:
lettuce
tomato
shredded cheddar cheese
diced onions
guacamole
sour cream if you would like 
salsa if you would like

Directions:

Place your pulled pork in a pot or skillet, heat till warm.  Add DRAINED black beans, green chilies.  Stir until mixed well.


 Add taco seasoning and water, heat until your ready to eat it.

In a frying pan, heat oil on a medium heat.  Fry each corn tortilla until toasty brown

Place on a plate covered in napkins or paper towels to soak up excess grease.

Assemble your tostada:
1st: guacamole
2nd: onions
3rd: meat mixture
4th: cheese...so it melts
then add lettuce, tomatoes and whatever else you would like to add.

Beef Enchilada Casserole

I've been using this recipe for years.  I usually have to make 2 pans because, I love the corn tortillas and my kids love flour tortillas.  The recipe listed uses corn tortillas.  You can substitute flour but you will not have to soften them like you do with the corn.

Ingredients:

  • 2 lbs ground beef
  • 1/3 Cup chopped onion
  • salt to taste 
  • 1 lb or more shredded cheddar cheese
  • 1 pkg corn tortillas
  • 1 large can of re-fried beans
  • 1 cup shortening
Sauce:
1/2 Cup shortening
2/3 Cup flour
1/4 Cup Chili powder
5 Cups warm water

Directions:

In  a skillet, brown and drain ground beef.  Add salt and onion and re-fried beans.  Cook for 5 min. and set aside.

To make sauce, use a 3 quart pan.  Melt shortening and add flour, chili powder and water.  Stir and make like gravy.  If it thickens too much, add water.  Leave on simmer.  Use medium skillet.  Melt shortening on medium heat.  Fry tortilla one at a time to get soft and then dip in sauce.  After dipped in sauce, set on a plate and put about a tablespoon of meat and cheese.  Roll up and set in baking dish.  After dish is full sprinkle with cheese and remainder of sauce.  Bake for 30-45 min. at 300*. Serve hot.

Taco Salad

Most of the time I make this as a meal all by itself.  My dad actually made this one and we had a lot of company so I threw some grilled chicken with it.  Just so happens his recipe is the same as mine.  This is great for warm days and you don't want to heat your house up, or you just want something light, yet filling.  You will love this recipe.


Ingredients:

1 lb. ground beef
1 can kidney beans drained
1 can chili beans drained
1 bunch green onions or 1 whole onion chopped
1 head of lettuce chopped
2-3 tomatoes diced
1 bag shredded cheddar cheese
1 bag Doritos crushed
1 packet taco seasoning
1 bottle Italian Dressing

Directions:

Cook your ground beef and drain any grease.  Add your packet of taco season with 1/4 cup water.  You don't want the sauce on the meat runny, but you want it well coated.  Then set aside to cool.  In a very LARGE container add chopped lettuce, tomatoes, onion, drained beans, and cheese.  After meat has cooled add it to the salad mixture.  Stir until it is all well mixed.  When you are ready to eat it add your crushed Doritos and Italian Dressing.  I like to wait if I'm taking it somewhere because the Doritos will get soft.  I like them crunchy.

Venison Tacos

These are Gluten Free, Soy Free, and Dairy Free!!  I have had to change my diet due to celiac and hashimotos disease.  You will be seeing some healthier recipes.  Don't worry though kids, I'll still post some of your favorites!!


Ingredients:


  • 2-3 pounds cooked venison burger, or 95% lean ground beef
  • 2 cloves minced garlic
  • 3 pkg of your favorite taco seasoning, or homemade (6 Tbsp chili powder, 2 Tbsp Onion powder, 1 Tbsp Garlic powder)
  • 1 1/2 cup water
  • chopped onion
  • diced tomato, fresh
  • Romaine heart lettuce
Kids added sour cream and lettuce and shredded cheese

Directions:

Brown burger until completely cooked.  Add your seasoning with 1 1/2 cups water.  Mix well.  Pull romaine leaves apart.  Add about 1-2 oz of taco meat to each romaine leaf.  Then add your toppings.  I made 3 for myself.  Came out to be 332 calories.

Slow Cooker Venison Burritos

If you are not a venison fan, you can also use beef.  My family are wild game hunters and we eat a lot of it. I'm always trying new creative ways to cook it.  This recipe is just something I threw together today.  I had a roast in the refrigerator that needed cooked  so here's what my family is getting to try today.


Ingredients:


  • 1 medium Venison Roast cubed, you could also use round steaks
  • 1/2 cup taco seasoning
  • 1 15 oz can Italian diced tomatoes with green chilies
  • 1 15 oz can black beans drained
  • 2 tbsp corn starch
  • Tomatoes diced
  • Onions diced
  • Lettuce chopped
  • Sour cream
  • Tortillas
  • Salsa if you choose
  • Shredded Cheese


Directions:


 Cube your roast and place into crock-pot.  Top with Taco Seasoning, Diced tomatoes, and black beans.  Cover and cook on high until meat is tender.  Mix cornstarch with 1/4 Cup water.  Stir and add to meat mixture, stirring constantly.


Voila!  Simple Recipe and the family loved it!


Fill your tortilla with meat mixture.  Then top with cheddar cheese, tomatoes, onion, lettuce, and hot sauce or salsa.  Yumm Yumm!!!  Enjoy!!

Super Duper Nachos!!




This is something I make for football parties, or after having chili the night before.  Everyone loves Nachos.  You can put whatever toppings you would like.  This is one of my families favorite meals.

Directions
  • Tortillas. I do corn and flour.  I prefer the crunch of the corn tortillas my kids like the light flaky taste of the flour tortillas.
  • Cut your tortillas in half and then in 3rd s to form triangle shaped chips. Cut as many as you think you will need for your family.  For football parties I do a whole 12 ct pkg of flour and a whole 25 ct pkg of corn depending on how many have been invited.  It makes a lot.
  • Fry in Fry Daddy until Golden brown.
  • Place in a Large glass bowl or serving bowl with a paper towel at the bottom to soak up excess grease.
Taco Meat Ingredients:
  • 2 lbs ground beef or venison
  • 6 Tbsp chili seasoning
  • 1 tbsp  onion powder
  • 1 Tbsp garlic powder
  • 2 tsp garlic salt
  • 1 tsp salt
  • 1 cup of water
Directions:  Fry burger until cooked thoroughly.  Drain excess grease.  (I wash mine after cooking) Add all of the seasonings and water.  Stir well and let cook on low for about 10 min.

Toppings for Nachos:

Home fried Tortilla chips (I will blog a recipe for homemade tortillas soon)
Taco Meat
Chili ( I will blog a recipe for homemade chili soon)
Nacho cheese (I buy the VERY large can at Walmart.  Its already spicy)
chopped onion
tomatoes
lettuce
black olives
jalapenos
sour cream

Pico De Gallo

You will need:

3 tomatoes chopped
1 onion chopped
2-3 garlic cloves chopped
1-2 jalapenos seeded and chopped
3-4 sprigs of cilantro chopped (this is an acquired taste...you may want to add less)
1 tsp garlic powder
1/2 tsp salt
1/4 slice of lime

Add all ingredients together except for lime and stir well.  Squeeze lime juice over mixture, stir and refrigerator for about 30 min. before serving.

Mexican Cheese Dip

You will Need:

1 lb. ground beef or venison
3 small cans of diced green chilies
1/2 block of velveeta cubed
1 large can of cream of mushroom soup

Brown your burger.  Drain grease.  Add remainder of ingredients and melt over medium heat in sauce pan until cheese is completely melted.  Serve with Tortilla chips.  Very Delightful.

Breakfast Burritos

This makes MANY!

You will need:
1-2 lbs pork sausage
1 whole onion chopped
2 jalapenos chopped- leave seeds if you want it spicy
1 dozen eggs
1 bag hash browns
1 jar of salsa
1 16 oz bag of shredded cheddar cheese
24 ct. small tortilla package

I brown the sausage and onion in a pan and the hash browns and jalapenos in another pan. While browning, crack 12 eggs in a bowl and whip.  Once the sausage is done drain the grease out of the pan and then add the eggs to the sausage and cook until eggs are done.  Then, simply add your hash brown mix to your sausage mix and add the salsa and cheese.  Mix well, and serve up into your tortillas.

Stephie's Green Chili-Everyones Favorite

pork roast
1 Large can of green chilis (chopped)  I buy the HUGE can. you can use about 6 of the small cans.
garlic cloves (several) minced
1 can rot-ell tomatoes and green chilies
chicken broth- I use about 6-8 cups adding a little at a time
3 small cans or 1 large jar of herdez green chili salsa
salt
garlic salt

cube your pork roast a cook in oil.  once cooked add flour to your oil to make a gravy.  Instead of milk, use your chicken broth.  Cook till thickened.  Add your green chilis, rotell,green chili salsa, garlic, salt, and garlic salt.  Simmer in pot for a few hours or put in crockpot. It should be thick.  If not use a little cornstarch and broth. This is so good with fried tortillas batter or over burritos, or just as a bowl of chili.  The more green chilis and garlic, the better.

Green Enchiladas, mama Diehl style

3lb hamburger
2 pkg. corn tortillas
1 onion
2 bunches green onions chopped
2 cans cream of chicken soup
2 cans green chilies chopped
2 c. milk
1 lb. velveeta cheese
2 c cheddar cheese
1 tbsp. chives
Fry your hamburger and onion.  drain grease.  In sauce pan compbine cream of chicken soup, green chilies, milk, green onions, and velveeta(cubed). Soften your corn tortillas in hot grease, then fill each one with hamburger and a little sauce.  Once all are filled, pour remainder of sauce over enchiladas.  top with cheddar cheese and chives.  Cover and bake at 325 for 45 min.
