Hush Puppies

Our family loves to fish!!  We enjoy fish fries on a regular basis, along with grilled fish.  When we enjoy our fried fish, I also make up a batch of hush puppies.  These have a crispy on the outside and moist bread center, that pack some flavor.  


Ingredients:

  • 1 Cup Cornmeal
  • 1 cup flour
  • 4 tsp. baking powder
  • 1 whole onion
  • 1 egg
  • 1 can beer (pabst blue ribbon is the best for this recipe)
  • 1 tsp. salt
Directions:




Mix all dry ingredients together. Add whole chopped onion, egg and whole can of beer.  Mix well. 









Drop by spoonfuls into preheated hot oil.  Fry on each side until golden brown.  Remove from fryer onto a plate covered with paper towels to soak up any extra grease.





Voila!!!  1 batch makes quite a few hush puppies, my daughter stole 3 off the plate above before I could snap the picture :)

Fresh Fried Fish




Jerry, Mike and I enjoy fishing the first part of spring.  You can use this recipe for any type of fish.  This is bass.  We enjoy it with homemade hush-puppies.

Ingredients:
2 Cups flour
1 tsp. creole seasoning
1 tsp salt
1 tsp garlic powder
1/2 tsp pepper
1 egg
1 can of beer

Directions:

Combine all of the dry ingredients and mix thoroughly.  Add egg and beer.  Completely mix.  There should not be any lumps.  Pat dry your fish before dipping into batter.  Dip on both sides of fish and drop into a HOT fry daddy.  Fry until golden brown.  Remove from fryer and place on a plate with a paper towel to soak up excess grease.  Continue the process until you have finished each piece.  Ready to eat.  Enjoy!!
