Cornbread

This is a sweet cornbread.  My family loves it with butter and syrup, but you can eat it plain.  Very moist and delicious!  You can omit the sugar if you do not like sweet bread.  I double this recipe for a 9x13 pan.

You will need:

1 1/2 C. cornmeal                                     1 C milk
1/2 C flour                                                1 egg beaten
4 tsp. baking powder                                1/4 C melted fat or oil
1/2 tsp salt                                               3/4 c sugar

Mix cornmeal, flour, baking powder and salt, and sugar.  Mix together milk, egg and add oil.  Add milk mixture to cornmeal mixture.  Stir only enough to mix.  Fill greased baking pan.  Bake at 425* for about 25 min. or until lightly browned.  It should be firm if you touch the middle of the bread. Makes about 6 servings.
