If your like me, you love the comfort foods in life!! Being allergic to everything kind of puts a hinder on those yummy things in life...rest assured....these are fantastic!! Spinach noodles. They have a lot of flavor. The texture was fluffy, instead of doughy like an egg noodle.
Ingredients:
1 15oz can spinach drained and puréed
1 3/4 cup brown rice flour
2 tsp xanthan gum
1 tsp Salt (I use No Salt)
1 3/4 cup brown rice flour
2 tsp xanthan gum
1 tsp Salt (I use No Salt)
Instructions:
Sift dry ingredients together. Mix in pureed spinach. Knead together well. It should form a ball similar to egg noodles. Roll out onto a cutting board covered in a dust of brown rice flour. Then cut carefully. Dough is a little softer than regular noodle dough. Let dry for 2 hours. Then cook in your favorite soup. Bring broth to a boil and then add noodles. Cook for about 30 min.
